Creamy Pineapple Cashew Smoothie
Ingredients
½ cup cashews
1 cup pineapple chunks, frozen
1 cup kale, de-stemmed and torn into pieces
½ medium apple, cut into chunks
1 ½ – 2 cups milk (dairy or plant-based)
Directions
Place the cashews in a bowl or small container and add enough water to cover them by a half-inch. Transfer to the fridge to soak overnight
Drain the water from the cashews. Add all ingredients, including 1 ½ cups of milk, to a high-speed blender and blend on high until smooth. Add another ½ cup of milk to thin the smoothie if needed.
Serve immediately.
